Ingredients
- ½ lb shrimp, peeled and deveined
- 4 cups romaine lettuce, chopped
- 1 cup croutons
- 3 tbsp mayonnaise
- 1 tbsp lemon juice
- ¼ cup parmesan cheese, shaved

In a small bowl, whisk 3 tbsp mayonnaise, 1 tbsp lemon juice, and a pinch of salt and pepper until smooth. Set aside.

Heat 1 tbsp olive oil in a skillet over medium-high. Add 0.5 lb shrimp and cook until pink and opaque, about 3 minutes per side. Remove from heat.
