  • 2 cups cooked jasmine rice, chilled
  • 1 pineapple fresh pineapple, diced (about 1 cup) plus 1 shell reserved
  • ½ cup roasted cashews, halved
  • 2 tbsp fish sauce
  • 1 whole lime (juiced)
  • 2 whole scallion, sliced

Instructions

    Heat 2 tbsp oil in a 12-inch skillet over high heat until shimmering, about 1 minute.

    Add shrimp in a single layer and sear without stirring for 2 minutes until edges turn pink and opaque.

    Flip shrimp and cook another 90 seconds, then push to the side of the skillet.

    Add cold rice to the cleared side, break up clumps, and stir constantly for 3 minutes until heated through.

    Toss in diced pineapple, cashews, fish sauce, and lime juice; stir for 1 minute until fragrant.
