Shrimp Pasta with Garlic and Olive Oil

Ingredients
- 8 oz spaghetti
- ½ lb shrimp, peeled and deveined
- 4 cloves garlic, thinly sliced
- ¼ cup olive oil
- ¼ cup Parmesan cheese, grated
- 2 tbsp fresh parsley, chopped

Cook the 8 oz spaghetti in salted boiling water until al dente, about 9 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, heat 1/4 cup olive oil in a large skillet over medium. Add 4 sliced garlic cloves and cook until fragrant and lightly golden, about 2 minutes.

Add the 1/2 lb shrimp to the skillet and cook until pink and opaque, about 3 minutes per side. Season with salt and pepper.

Add the drained spaghetti to the skillet with 1/4 cup reserved pasta water. Toss everything together for 1-2 minutes until the sauce coats the pasta.

Remove from heat and stir in 1/4 cup grated Parmesan and 2 tbsp chopped parsley. Serve immediately with extra Parmesan if desired.
