Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 whole fresh limes, juiced
  • ½ medium red onion, diced small
  • ½ cup fresh cilantro, chopped
  • 1 whole jalapeño, minced
  • 1 pinch salt and black pepper to taste

Instructions

    Pat shrimp dry, then cut each one in half lengthwise so the lime juice can reach every surface.

    Place shrimp in a bowl and pour fresh lime juice over it until fully submerged.

    Cover and refrigerate for 10 minutes. The acid will firm up the shrimp and turn it opaque.

    Stir in red onion, cilantro, jalapeño, salt, and pepper. Taste and adjust seasoning.
