Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 tablespoons tomato paste
- 1 cup heavy cream
- 2 tablespoons lime juice

Melt the 2 tbsp butter in a large pot over medium heat. Add the 1 chopped onion and cook until soft and translucent, about 5 minutes.

Add the 1 lb shrimp and 2 tbsp tomato paste. Cook until shrimp turn pink and are just cooked through, about 3-4 minutes.

Transfer the shrimp to a plate, reserving a few for garnish. Add the 1 cup heavy cream and 2 tbsp lime juice to the pot, scraping up any browned bits. Simmer gently for 2-3 minutes until slightly thickened.

Return the shrimp to the pot and stir to combine. Season with salt and pepper to taste. Serve hot, garnished with fresh rosemary and a lime wedge if desired.
