Ingredients

  • 2 medium cucumber (Persian or English, diced 1/2-inch)
  • 2 medium tomato (diced 1/2-inch)
  • ⅓ cup red onion (diced fine)
  • ¼ cup fresh mint (chopped)
  • 2 whole lime (juiced)
  • 3 tbsp olive oil

Instructions

    Dice the cucumber and tomato into roughly 1/2-inch cubes, removing excess tomato seeds if watery.

    Dice the red onion fine and add to a large bowl with the cucumber and tomato.

    Pour the lime juice and olive oil over the vegetables and toss gently until coated.

    Add the chopped mint and a pinch of salt and pepper, then toss once more.

    Serve immediately at room temperature, or chill up to 2 hours before serving.
