Ingredients

  • 2 medium cucumber, diced into small cubes
  • 2 medium tomato, diced into small cubes
  • ¼ medium red onion, finely diced
  • ¼ cup fresh mint leaves, chopped
  • 2 whole lime, juiced
  • ½ tsp sumac
  • 1 per person lemon wedges, for serving

Instructions

    Dice the cucumber, tomato, and red onion into roughly 1/4-inch cubes and place in a large bowl.

    Add the chopped mint, lime juice, sumac, and a pinch of salt and black pepper to the bowl.

    Toss everything gently until combined, then taste and adjust lime juice or sumac to your preference.

    Divide among plates and serve immediately with lemon wedges on the side.
