Beef and Mushroom Pasta

Ingredients

  • 8 oz wide pasta noodles
  • ¾ lb beef sirloin
  • 8 oz cremini mushrooms
  • 3 cloves garlic
  • 2 tbsp olive oil
  • ½ tsp red pepper flakes
  • ¼ cup fresh parsley
  • 1 tsp salt

    Bring a large pot of salted water to a boil. Add the 8 oz pasta and cook until al dente, about 10-12 minutes. Reserve 1 cup of pasta water, then drain.

    While pasta cooks, slice the 0.75 lb beef into thin strips and season with 0.5 tsp salt. Heat 1 tbsp olive oil in a large skillet over medium-high heat.

    Add the beef in a single layer and sear until browned on all sides, about 4-5 minutes. Remove beef from the skillet and set aside.

    Reduce heat to medium. Add the remaining 1 tbsp olive oil, 8 oz sliced mushrooms, and 3 minced garlic cloves. Cook until mushrooms are golden and tender, about 6-8 minutes.

    Return the beef to the skillet. Add 0.5 tsp red pepper flakes and 0.25 cup chopped parsley. Stir to combine.

    Add the drained pasta and 0.5 cup of the reserved pasta water. Toss everything together over medium heat until the sauce coats the pasta, about 2-3 minutes. Season with remaining salt to taste.

    Serve hot, topped with extra parsley if desired.
