Ingredients
- 2 slice bread slices
- 4 oz halloumi cheese
- 1 avocado
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 2 tbsp fresh herbs (such as parsley or mint)
- ¼ tsp salt
- ¼ tsp black pepper

Toast the 2 bread slices until golden and crisp, about 3-4 minutes.

Cut the 4 oz halloumi into 1/2-inch thick slices. Heat 1 tbsp olive oil in a skillet over medium-high heat.

Cook the halloumi slices for 2-3 minutes per side, until golden brown and crispy on the outside.

While the halloumi cooks, halve and pit the avocado. Scoop the flesh into a bowl and mash with a fork.
