Ingredients
- 2 pieces pita bread
- 250 g (8 oz) halloumi cheese
- 200 g (6 cups chopped) romaine lettuce
- 200 g (1 large) cucumbers
- 300 g (2 medium) tomatoes
- ½ small red onion
- 1 piece lemon (juiced)
- 1 tsp sumac
- 5 tbsp divided olive oil

Tear pita into 2-inch irregular pieces. Brush lightly with 1 tbsp oil and spread on a dry skillet.

Toast pita pieces over medium heat, tossing occasionally, until golden and crisp, 4–5 minutes.

Slice halloumi into 1/4-inch thick slabs. Chop lettuce into bite-size pieces.

Dice cucumber and tomato into 1/2-inch chunks. Thinly slice red onion.

Heat 2 tbsp oil in a clean skillet over medium-high until shimmering, about 90 seconds.

Pan-fry halloumi slices 1.5–2 minutes per side until edges are golden and cheese softens slightly.

Whisk lemon juice, sumac, remaining 2 tbsp oil, salt, and pepper in a small bowl.

Toss lettuce, cucumber, tomato, and onion together in a large bowl.
