Ingredients

  • 2 count large flour tortillas (or spinach wraps)
  • ¾ cup hummus
  • 1 medium, sliced lengthwise 1/4-inch thick zucchini
  • 1 large, cut into 3-inch strips bell pepper (any color)
  • 1 cup, lightly packed fresh spinach or arugula
  • 2 tbsp tahini
  • ½ count lemon (juiced)

Instructions

    Heat a grill pan or skillet over medium-high heat until hot, about 1 minute.

    Brush zucchini and bell pepper with oil, salt, and pepper. Grill 2-3 minutes per side until charred and tender.

    Warm tortillas directly over the flame (or in the skillet 30 seconds per side) until pliable.

    Whisk tahini and lemon juice with 1 tbsp water until smooth; season with salt and pepper.

    Spread 3 tbsp hummus on each tortilla, then layer spinach, grilled vegetables, and extra veggies if desired.

    Drizzle tahini sauce over filling, roll tightly, cut in half, and serve immediately with extra sauce on the side.
