Ingredients
- ¾ lb ground lamb
- 1 medium, divided red onion
- 1 large red bell pepper
- 2 large roma tomatoes
- ¾ tsp cumin
- ½ tsp urfa pepper (or smoked paprika)
- ¼ cup, chopped fresh parsley

Thinly slice half the red onion. Toss with a pinch of salt and set aside for the salad.

Mix ground lamb with cumin, urfa pepper, and a pinch of salt. Form into a flat patty on a sheet pan.

Heat a 12-inch cast iron skillet over medium-high heat. Sear the lamb patty 4 minutes until the bottom is deeply browned.

Flip the patty, then slide it onto the sheet pan. Arrange tomato halves and pepper pieces around it.

Broil 4–5 minutes until vegetables char and the lamb is cooked through. Internal temp 160°F.

Plate the kebab, vegetables, and pickled onions. Top with fresh parsley and serve immediately.
