Ingredients

  • 1 lb lamb shoulder or leg, cut into 1.5-inch cubes
  • ½ cup plain yogurt
  • ½ medium onion, grated
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 whole lemon (for serving)

Instructions

    Toss lamb cubes with yogurt, grated onion, cumin, paprika, salt, and pepper in a bowl.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Add lamb in a single layer. Don't stir for 2 minutes — let it sear and char on the bottom.

    Stir and continue cooking, tossing occasionally, until the edges are deeply browned, 3–4 minutes.
