Ingredients
- 1 lb ground lamb
- 1.5 tsp Urfa chili flakes (or Aleppo pepper)
- ½ tsp cumin
- ¾ cup Greek yogurt
- ½ whole red onion, thinly sliced
- ¼ cup fresh parsley (chopped)
- 2 tbsp chili oil

Mix ground lamb with Urfa chili, cumin, 1 tsp salt, and black pepper until just combined. Form into 4 oval patties about 1 inch thick.

Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering.

Sear lamb patties 4 minutes per side without moving — edges should look deeply charred.
