Ingredients

  • 1 lb lamb shoulder, cubed into 1.5-inch pieces
  • ½ medium yellow onion, cut into 1-inch chunks
  • 1 medium red or green bell pepper, cut into 1-inch chunks
  • 1 whole lemon (zested + juiced)
  • 1.5 tsp ground cumin and sumac, mixed
  • 2 tbsp olive oil

Instructions

  1. 1

Toss lamb with lemon zest, lemon juice, cumin-sumac blend, salt, and pepper until evenly coated.

  2. 2

Thread lamb, onion, and pepper onto metal skewers, alternating pieces until full.

  3. 3

Heat olive oil in a large heavy skillet over medium-high until it shimmers, about 90 seconds.

  4. 4

Lay skewers flat in the pan and sear 2 minutes without moving until charred on one side.

  5. 5

Flip and sear another 2 minutes on the second side — lamb should look caramelized outside, pink inside.

  6. 6

Transfer to a plate and rest for 2 minutes. Serve immediately with warm pita or rice.

Tools you’ll need

  • 4 metal skewers (or wooden, soaked 20 minutes)
  • 12-inch heavy skillet or cast iron
