Ingredients
- 1 lb lamb shoulder, cubed into 1.5-inch pieces
- ½ medium yellow onion, cut into 1-inch chunks
- 1 medium red or green bell pepper, cut into 1-inch chunks
- 1 whole lemon (zested + juiced)
- 1.5 tsp ground cumin and sumac, mixed
- 2 tbsp olive oil

Toss lamb with lemon zest, lemon juice, cumin-sumac blend, salt, and pepper until evenly coated.

Thread lamb, onion, and pepper onto metal skewers, alternating pieces until full.

Heat olive oil in a large heavy skillet over medium-high until it shimmers, about 90 seconds.

Lay skewers flat in the pan and sear 2 minutes without moving until charred on one side.

Flip and sear another 2 minutes on the second side — lamb should look caramelized outside, pink inside.
