Ingredients
- 1.5 lbs potatoes, waxy (about 1.5 lbs)
- 1 medium apple, tart variety
- ½ medium yellow onion
- 1 cup gruyère or emmental cheese, shredded
- 1 tbsp whole-grain mustard
- 1 tsp thyme, fresh (optional)

Heat 3 tbsp olive oil in a 12-inch skillet over medium-high heat until shimmering.

Shred the potatoes and apple on a box grater. Thinly slice the onion. Toss with salt and pepper.

Spread the potato-apple mixture in the skillet, pressing down. Cook until the bottom is golden and crispy, about 8 minutes. You'll smell it browning.

Scatter cheese and thyme over the top. Swirl mustard with 2 tbsp water, then drizzle over.

Flip in sections using a spatula (or slide onto a plate and flip back into the pan) and cook 4 more minutes until the second side is golden.
