Ingredients

  • 4 links knackwurst sausages
  • 1 lb chicken breast or thighs, cut into 1.5-inch chunks
  • 1 large yellow onion, sliced into thick half-moons
  • 2 tbsp whole-grain mustard
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper

Instructions

    Heat oven to 425°F. Toss chicken, onion, and oil on a sheet pan with salt and pepper.

    Roast for 8 minutes until chicken is partially cooked and onions begin to soften.

    Pull pan out, nestle knackwurst among the chicken and onions, drizzle mustard over everything.

    Return to oven for 10 minutes until sausages are heated through and chicken is cooked through.

    Stir the pan once to coat everything in mustard glaze. Taste and adjust seasoning.

    Serve hot on a platter or divide between plates.
