Ingredients
- 4 links knackwurst sausages
- 1 lb chicken breast or thighs, cut into 1.5-inch chunks
- 1 large yellow onion, sliced into thick half-moons
- 2 tbsp whole-grain mustard
- 2 tbsp olive oil
- 1 pinch salt and black pepper

Heat oven to 425°F. Toss chicken, onion, and oil on a sheet pan with salt and pepper.

Roast for 8 minutes until chicken is partially cooked and onions begin to soften.

Pull pan out, nestle knackwurst among the chicken and onions, drizzle mustard over everything.
