Ingredients

  • 1.5 lbs pork belly or shoulder, thinly sliced
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp soy sauce
  • 1.5 tbsp sesame oil
  • 1 tbsp brown sugar
  • 4 cloves garlic, minced
  • 4 whole scallions, cut into 2-inch pieces
  • 1 tbsp sesame seeds

Instructions

    Preheat oven to 450°F. Whisk gochujang, soy sauce, sesame oil, brown sugar, and garlic in a small bowl until smooth.

    Toss pork slices with the gochujang mixture on a sheet pan until coated evenly. Spread in a single layer.

    Roast for 12–15 minutes, stirring halfway through, until edges are caramelized and pork is cooked through.

    Scatter scallions over the pork and toss gently to coat. Return to oven for 1 minute until scallions wilt slightly.

    Sprinkle sesame seeds over the top and serve immediately over warm rice.
