Ingredients

  • 10 oz frozen spinach, thawed and squeezed dry
  • ¾ cup feta cheese, crumbled
  • 12 sheets phyllo dough sheets
  • ¼ cup olive oil
  • ½ tsp sumac
  • 1 whole lemon
  • 1 pinch salt and black pepper to taste

Instructions

    Mix spinach, feta, sumac, salt, and pepper in a bowl until combined.

    Lay one phyllo sheet on a work surface and brush lightly with olive oil.

    Spoon 1 tbsp filling onto one corner, then fold the sheet diagonally twice to form a triangle. Repeat with remaining phyllo and filling.

    Arrange triangles on a sheet pan and brush each lightly with remaining olive oil.

    Bake at 400°F for 15–18 minutes until edges are deep golden and crispy.
