Ingredients

  • 1.5 lb beef tenderloin tips (puntas de filete)
  • 1 large yellow onion, sliced into thick wedges
  • 3 whole fresh jalapeños, halved lengthwise
  • 4 cloves garlic cloves, minced
  • 1 whole lime (juiced + zested)
  • ½ cup cotija cheese, crumbled
  • ¼ cup fresh cilantro, chopped
  • 1 tsp chipotle powder or chili powder

Instructions

    Pat beef dry with paper towels. Season generously with salt, pepper, and chipotle powder on all sides.

    Heat 2 tbsp oil in a 12-inch cast iron skillet over medium-high until it shimmers, about 90 seconds.

    Sear beef 2 minutes per side without moving. Edges should be golden brown; don't flip more than once. Transfer to a plate.

    Add onion and jalapeño to the same skillet, cut-side down. Sear 3 minutes until charred, then scatter garlic over top.

    Stir for 30 seconds until garlic is fragrant. Pour in lime juice, scrape up browned bits, then return beef to the pan.

    Top with cotija and cilantro. Serve immediately with lime zest scattered over and warm tortillas on the side.
