Ingredients
- 1.5 lb beef tenderloin tips (puntas de filete)
- 1 large yellow onion, sliced into thick wedges
- 3 whole fresh jalapeños, halved lengthwise
- 4 cloves garlic cloves, minced
- 1 whole lime (juiced + zested)
- ½ cup cotija cheese, crumbled
- ¼ cup fresh cilantro, chopped
- 1 tsp chipotle powder or chili powder

Pat beef dry with paper towels. Season generously with salt, pepper, and chipotle powder on all sides.

Heat 2 tbsp oil in a 12-inch cast iron skillet over medium-high until it shimmers, about 90 seconds.

Sear beef 2 minutes per side without moving. Edges should be golden brown; don't flip more than once. Transfer to a plate.

Add onion and jalapeño to the same skillet, cut-side down. Sear 3 minutes until charred, then scatter garlic over top.

Stir for 30 seconds until garlic is fragrant. Pour in lime juice, scrape up browned bits, then return beef to the pan.
