Ingredients
- 8 links (about 2 lbs) pork boerewors sausages
- 2 large, chopped into 1-inch chunks red and yellow bell peppers
- 1 large, sliced into thick rings red onion
- 1 tbsp, toasted and crushed coriander seeds
- 1.5 tsp smoked paprika
- 3 sprigs fresh thyme
- 3 tbsp olive oil
- 2 tbsp white wine vinegar

Preheat oven to 425°F. Prick each sausage 3–4 times with a fork to prevent bursting.

Toss peppers, onion, coriander, paprika, thyme, and 2 tbsp oil on a sheet pan until coated.

Nestle sausages among the vegetables. Rub with remaining 1 tbsp oil, salt, and pepper.
