Ingredients

  • 8 links (about 2 lbs) pork boerewors sausages
  • 2 large, chopped into 1-inch chunks red and yellow bell peppers
  • 1 large, sliced into thick rings red onion
  • 1 tbsp, toasted and crushed coriander seeds
  • 1.5 tsp smoked paprika
  • 3 sprigs fresh thyme
  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar

Instructions

    Preheat oven to 425°F. Prick each sausage 3–4 times with a fork to prevent bursting.

    Toss peppers, onion, coriander, paprika, thyme, and 2 tbsp oil on a sheet pan until coated.

    Nestle sausages among the vegetables. Rub with remaining 1 tbsp oil, salt, and pepper.

    Roast 18–20 minutes until sausages are deeply browned and vegetables are charred at edges.

    Drizzle vinegar over everything. Toss gently and taste for seasoning.

    Serve hot, with bread or rice on the side if desired.
