Ingredients

  • 1 lb ground beef
  • ½ medium onion, finely diced
  • ⅓ cup fresh parsley, finely chopped
  • 1.5 tsp ground cumin
  • ½ tsp cayenne pepper
  • 3 tbsp tahini

Instructions

    Mix ground beef, onion, parsley, cumin, cayenne, and a pinch of salt and pepper in a bowl until just combined.

    Divide mixture into 4 portions and mold each tightly around a metal skewer into a long cylinder.

    Arrange kofta on an oiled sheet pan and roast at 425°F for 12–14 minutes until browned and cooked through.

    Whisk tahini with 2 tbsp warm water, 1 tbsp lemon juice, and a pinch of salt until creamy.

    Slide kofta off skewers onto a plate or into warm pita.
