Ingredients
- ¾ lb beef sirloin or ribeye steak, thinly sliced (1/8 inch)
- ½ medium red onion, thinly sliced
- 3 tbsp white vinegar
- 1 large red bell pepper
- 2 medium tomato
- 1 cup fresh parsley, roughly chopped
- 1 whole lemon
- 4 pieces pita bread or flatbread

Toss sliced red onion with 3 tbsp vinegar, a pinch of salt, and let sit while you prep.

Halve the bell pepper and tomatoes. Heat oil in a large skillet over medium-high until shimmering.

Sear beef slices in batches 90 seconds per side — don't stir — until edges brown and char.

Season beef with salt, pepper, and 1 tsp cumin or sumac. Push to the side; char pepper and tomato halves 2–3 minutes per side until blistered.

Toss parsley with lemon juice, salt, and olive oil. Warm pita in the skillet 30 seconds per side until soft and pliable.
