Sheet-Pan Ayam Bakar

Ingredients

  • 8 pieces (about 3 lbs) chicken thighs, skin-on and bone-in
  • 2 tbsp grated ginger, peeled
  • 6 cloves garlic cloves, minced
  • 3 chilies thai red chilies, seeded and minced
  • ½ cup coconut milk
  • 2 tbsp fish sauce
  • 1 whole lime, halved
  • 2 medium shallots, thinly sliced

Instructions

    Pat chicken dry with paper towels. Season all over with salt and black pepper.

    Combine ginger, garlic, chilies, coconut milk, and fish sauce in a small bowl, stirring until smooth.

    Rub paste all over chicken pieces, coating skin and underneath. Let sit 5 minutes.

    Arrange chicken skin-side up on a sheet pan. Roast at 425°F for 20–22 minutes until skin is crispy and golden.

    Scatter sliced shallots over chicken in the last 2 minutes of cooking until fragrant and lightly charred.

    Squeeze fresh lime juice over warm chicken. Serve immediately.
