Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 tbsp fresh ginger, peeled and minced
- 4 stalks scallions, white and green parts separated, thinly sliced
- 3 tbsp soy sauce
- ⅓ cup neutral oil
- 1 tsp sesame oil

Bring a pot of salted water to a boil. Add chicken breasts and simmer until internal temperature reaches 165°F, about 12 minutes.

Transfer chicken to a cutting board. Once cool enough to handle, shred into bite-sized pieces with two forks.
