Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp fresh ginger, peeled and minced
  • 4 stalks scallions, white and green parts separated, thinly sliced
  • 3 tbsp soy sauce
  • ⅓ cup neutral oil
  • 1 tsp sesame oil

Instructions

    Bring a pot of salted water to a boil. Add chicken breasts and simmer until internal temperature reaches 165°F, about 12 minutes.

    Transfer chicken to a cutting board. Once cool enough to handle, shred into bite-sized pieces with two forks.

    Heat neutral oil in a small skillet over medium-low until it shimmers, about 60 seconds. Add minced ginger and white scallion parts.

    Cook ginger-scallion mixture until fragrant, about 90 seconds. Pour over shredded chicken, add soy sauce and sesame oil.

    Toss chicken with the dressing until evenly coated. Transfer to a plate and scatter green scallion parts on top.
