Ingredients
- 2 cups cooked rice (white or brown)
- ¾ lb large shrimp, peeled and deveined
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 1 medium cucumber, thinly sliced
- 1 whole avocado, sliced
- 2 tbsp sesame seeds (white or black)

Stir soy sauce, rice vinegar, ginger, and garlic in a small bowl.

Pat shrimp dry with paper towels. Season lightly with salt and pepper.

Heat oil in a large skillet over medium-high until it shimmers, ~90 seconds.

Add shrimp and cook without stirring 90 seconds, then flip and cook 60 more seconds until pink throughout.

Pour the soy-ginger sauce over shrimp. Toss to coat and cook 30 seconds until glossy.
