Ingredients
- 2 cups cooked rice (white or brown)
- ¾ lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 whole lime (juiced)
- 1 whole cucumber, diced
- 3 tbsp olive oil

Heat 2 tbsp oil in a skillet over medium-high until it shimmers, ~90 seconds.

Add shrimp and cook without stirring for 2 minutes until the underside turns opaque pink.

Flip shrimp and cook 1 minute longer, then push to the edge of the skillet.

Add garlic and remaining 1 tbsp oil to center; stir until fragrant, ~30 seconds.

Toss shrimp with garlic, remove from heat, and squeeze lime juice over the top.
