Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 cups cooked jasmine rice
  • 1 whole lime
  • 1 whole cucumber, sliced
  • 1 whole avocado, sliced

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high until it shimmers.

    Add garlic and cook 30 seconds until fragrant, stirring constantly.

    Add shrimp and cook 2–3 minutes per side without stirring until pink and opaque.

    Squeeze half the lime over the shrimp. Season with salt and pepper to taste.

    Divide rice between two bowls. Top with shrimp, cucumber, and avocado.
