Ingredients

  • 1.5 cups jasmine rice (cooked)
  • 12 oz large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 whole lime (juiced)
  • 3 tbsp olive oil
  • 1 whole cucumber, sliced
  • 1 whole avocado, sliced
  • ¼ cup fresh cilantro, chopped

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high until it shimmers.

    Pat shrimp dry. Season with salt and pepper. Sear without moving 90 seconds per side until opaque.

    Remove shrimp to a plate. Add remaining 1 tbsp oil and garlic to the skillet.

    Cook garlic 30 seconds until fragrant. Pour in lime juice and return shrimp to the pan.

    Toss shrimp with sauce 20 seconds. Remove from heat and stir in cilantro.

    Divide cooked rice between two bowls. Top with shrimp, cucumber, and avocado slices.
