Ingredients
- 2 cups cooked jasmine rice
- ¾ lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp soy sauce
- 1 whole lime (juiced)
- ½ whole cucumber, sliced thin
- ¼ cup fresh cilantro or scallion, chopped

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, ~90 seconds.

Add shrimp and cook without stirring for 90 seconds until bottoms turn pink.

Flip shrimp and cook 60 seconds more until opaque throughout.

Push shrimp to the side. Add garlic and ginger to the empty space, stir 30 seconds until fragrant.

Pour soy sauce and lime juice over the shrimp. Toss to coat, cook 30 seconds.

Divide rice between two bowls. Top with shrimp and sauce.
