Ingredients

  • 1.5 cups cooked white rice
  • ¾ lb large shrimp, peeled and deveined
  • 1 whole avocado
  • 1 whole lime
  • 2 tbsp butter
  • ¼ tsp red pepper flakes

Instructions

  1. 1

Pat shrimp dry with paper towels. Season generously with salt and black pepper.

  2. 2

Heat butter in a large skillet over medium-high until foaming, about 60 seconds.

  3. 3

Add shrimp and minced garlic (about 3 cloves). Sear 90 seconds per side without stirring until pink and crispy at edges.

  4. 4

Squeeze half the lime into the skillet and remove from heat. Sprinkle red pepper flakes over top.

  5. 5

Divide rice between two bowls. Top with shrimp and pan sauce, then slice avocado and arrange alongside.

  6. 6

Serve hot with remaining lime wedge on the side.
