Ingredients
- 8 oz soba noodles
- ½ lb whole shrimp, peeled and deveined
- 4 cups bok choy, chopped into 2-inch pieces
- 3 cups low-sodium vegetable or dashi broth
- 2 tbsp sesame oil
- 1 tbsp fresh ginger, minced
- 2 tbsp soy sauce

Bring a large pot of salted water to a boil. Cook soba noodles until al dente, ~4 minutes. Drain and rinse under cold water. Set aside.

Heat 1 tbsp sesame oil in a large skillet over medium-high heat until shimmering, ~60 seconds.

Add shrimp in a single layer. Sear 90 seconds per side without moving until opaque and pink. Transfer to a plate.

In the same skillet, add ginger and stir for 30 seconds until fragrant. Pour in broth and soy sauce. Bring to a simmer.

Add bok choy and cook for 2 minutes until stems soften but leaves stay bright green.

Divide cooked noodles between two bowls. Ladle broth and bok choy over top. Top with shrimp and drizzle with remaining 1 tbsp sesame oil. Serve hot.
