Ingredients
- 1 cup kiriboshi daikon (dried daikon strips)
- 1 medium carrot
- 2 tbsp soy sauce
- 1.5 tbsp mirin (or honey)
- 1 tbsp sesame oil
- 1 tbsp sesame seeds (white or black)

Soak kiriboshi daikon in warm water for 4 minutes until softened but still chewy.

Drain daikon well. Julienne the carrot into thin matchsticks.

Heat sesame oil in a large skillet over medium-high heat until shimmering, about 1 minute.

Add daikon and carrot, stirring constantly until edges brown and char slightly, 3–4 minutes.

Pour soy sauce and mirin over the vegetables and toss for 30 seconds until glossy.

Transfer to a bowl and scatter sesame seeds on top. Serve warm.
