Ingredients
- 8 oz soba noodles
- 3 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 1 medium cucumber, thinly sliced
- ½ tsp chili oil or sriracha

Boil salted water in a pot. Cook soba noodles until al dente, ~4 minutes. Drain and rinse under cold water until cool.
