Cold Sesame Ginger Soba Bowl

Ingredients

  • 8 oz soba noodles
  • 3 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 1 medium cucumber, thinly sliced
  • ½ tsp chili oil or sriracha

Instructions

    Boil salted water in a pot. Cook soba noodles until al dente, ~4 minutes. Drain and rinse under cold water until cool.

    Whisk sesame oil, soy sauce, rice vinegar, and grated ginger in a large bowl until well combined.

    Add cooled noodles to the dressing and toss until every strand is coated.

    Divide noodles between bowls and top with sliced cucumber.
