Ingredients

  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp fresh ginger, minced
  • 8 oz soba noodles
  • 1 medium cucumber
  • 2 whole scallion, sliced

Instructions

    Boil soba noodles in salted water until al dente, about 4 minutes.
