Ingredients

  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 6 oz soba noodles
  • 2 heads (about 8 oz) bok choy, halved lengthwise
  • 2 medium tomatoes, sliced

Instructions

    Whisk sesame oil, rice vinegar, grated ginger, and soy sauce in a bowl.

    Boil salted water in a large pot, add soba noodles, and cook until al dente, about 4 minutes.

    While noodles cook, heat 1 tbsp oil in a skillet over medium-high. Add bok choy cut-side down until edges char, 3 minutes per side.

    Drain noodles and transfer to a large bowl. Pour dressing over top and toss until evenly coated.

    Divide noodles between bowls, arrange bok choy and tomato slices on top, and drizzle with any remaining dressing.
