Ingredients
- 3 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 6 oz soba noodles
- 2 heads (about 8 oz) bok choy, halved lengthwise
- 2 medium tomatoes, sliced

Whisk sesame oil, rice vinegar, grated ginger, and soy sauce in a bowl.

Boil salted water in a large pot, add soba noodles, and cook until al dente, about 4 minutes.

While noodles cook, heat 1 tbsp oil in a skillet over medium-high. Add bok choy cut-side down until edges char, 3 minutes per side.

Drain noodles and transfer to a large bowl. Pour dressing over top and toss until evenly coated.
