Ingredients

  • 1 cup heavy cream, cold
  • ¾ cup sweetened condensed milk
  • 2 tbsp dry sherry or Madeira wine
  • 16 count Maria biscuits (digestive biscuits or similar sweet crackers)
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon

Instructions

  1. 1

Pour cold cream into a bowl. Whip with a hand mixer or whisk until soft peaks form, about 2 minutes.

  2. 2

Fold in condensed milk, sherry, and vanilla until smooth and no streaks remain.

  3. 3

Place biscuits in a zip-lock bag. Crush with a rolling pin until you have fine, sand-like crumbs.

  4. 4

Spoon half the cream mixture into a serving bowl or individual glasses.

  5. 5

Scatter half the crushed biscuits over the cream layer, then repeat: remaining cream, then remaining crumbs.

  6. 6

Dust the top with cinnamon. Chill for at least 30 minutes or serve immediately for softer layers.
