Ingredients

  • 1 cup heavy cream
  • 2 tbsp granulated sugar
  • 8 whole speculoos cookies
  • ½ tsp vanilla extract
  • 2 tbsp whole milk

Instructions

  1. 1

Pour heavy cream and sugar into a chilled bowl. Whip with a hand mixer until stiff peaks form, about 2 minutes.

  2. 2

Fold vanilla extract into the whipped cream until combined.

  3. 3

Place speculoos cookies in a sealed bag and crush with a rolling pin or bottom of a glass until fine crumbs form.

  4. 4

Layer half the crushed cookies into two serving glasses or bowls.

  5. 5

Spoon half the whipped cream over the cookie layer, then repeat with remaining cookies and cream.

  6. 6

Drizzle milk over the top layer so the cookies absorb moisture and soften slightly, then serve cold.
