Ingredients

  • 1 cup granulated sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 4 large eggs
  • 1 tsp vanilla extract
  • ½ cup roasted nuts (almonds or hazelnuts), chopped

Instructions

    Heat 0.75 cup sugar in a small saucepan over medium, shaking occasionally, until golden amber, ~4 minutes. Pour into a round dish, tilting to coat the base evenly.

    Blend condensed milk, evaporated milk, eggs, vanilla, and remaining 0.25 cup sugar until smooth, ~1 minute. Pour over the caramel.

    Set the dish in a larger pan filled with hot water halfway up the sides (water bath). Microwave on 50% power for 6 minutes, rotating halfway.

    Custard should jiggle slightly in the center when nudged. Chill at least 2 hours or up to overnight.

    Run a thin knife around the edge and invert onto a serving plate so caramel pools on top. Scatter chopped nuts over the flan.
