Ingredients

  • 12 large scallops
  • 1.5 lb potatoes
  • 4 tbsp butter
  • ½ cup heavy cream
  • 4 medium radishes
  • 2 tbsp parsley

Instructions

    Peel and chop the 1.5 lb potatoes into 1-inch cubes. Boil in salted water until fork-tender, about 15 minutes.

    Drain the potatoes and mash with 2 tbsp butter and 1/2 cup heavy cream until smooth. Season with salt and pepper to taste.

    Pat the 12 scallops dry and season with salt and pepper. Heat 2 tbsp butter in a skillet over high heat until sizzling.

    Sear the scallops for 2 minutes per side until golden brown and just opaque in the center. Remove from pan.

    Serve the scallops over the mashed potatoes, garnish with sliced radishes and chopped parsley. Drizzle with any pan juices.
