Ingredients
- 12 large scallops
- 1.5 lb potatoes
- 4 tbsp butter
- ½ cup heavy cream
- 4 medium radishes
- 2 tbsp parsley

Peel and chop the 1.5 lb potatoes into 1-inch cubes. Boil in salted water until fork-tender, about 15 minutes.

Drain the potatoes and mash with 2 tbsp butter and 1/2 cup heavy cream until smooth. Season with salt and pepper to taste.

Pat the 12 scallops dry and season with salt and pepper. Heat 2 tbsp butter in a skillet over high heat until sizzling.

Sear the scallops for 2 minutes per side until golden brown and just opaque in the center. Remove from pan.
