Ingredients

  • 12 large scallops
  • 3 tbsp black sesame seeds
  • 4 slices bacon
  • 1 medium cucumber
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

    Pat the 12 scallops dry with paper towels and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper.

    Place the 3 tbsp black sesame seeds on a plate and press each scallop into them to coat one side.

    Cook the 4 bacon slices in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, leaving the bacon fat in the pan.

    Add the 2 tbsp olive oil to the same skillet over high heat. Sear the scallops sesame-side down for 2 minutes until golden and crusty, then flip and cook 1-2 minutes more until just opaque in the center.

    Slice the 1 cucumber into thin rounds and arrange on plates. Top with the scallops, crumble the bacon over, and drizzle with any pan juices.
