Ingredients
- 4 filets fish fillets
- 3 tbsp olive oil
- 2 medium onions
- 1.5 cups canned crushed tomatoes
- 2 cloves garlic
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley

Pat the 4 fish fillets dry and season both sides with 1/2 tsp salt and 1/4 tsp pepper. Set aside.

Heat 2 tbsp olive oil in a large skillet over medium. Add the 2 sliced onions and 1/2 tsp salt; cook, stirring occasionally, until deep golden and soft, about 15 minutes.

Add the 2 minced garlic cloves and cook until fragrant, about 1 minute. Stir in the 1.5 cups crushed tomatoes and 1/4 tsp pepper; simmer until slightly thickened, about 5 minutes.

Push the sauce to one side of the skillet. Add the remaining 1 tbsp olive oil to the empty side and place the fish fillets in a single layer. Sear until golden and cooked through, about 3-4 minutes per side.

Spoon the tomato-onion sauce over the fish and sprinkle with the 2 tbsp chopped parsley. Serve hot.
