Ingredients

  • ½ lb shrimp, peeled and deveined
  • ¼ lb squid, cleaned and sliced into rings
  • 4 cups chicken or seafood broth
  • 1 tbsp fish sauce
  • 4 oz rice noodles, dried
  • 1 whole fresh lime (juiced)
  • ½ cup fresh herbs (Thai basil, cilantro, or mint), chopped

Instructions

    Bring broth to a simmer in a large pot over medium heat.

    Add rice noodles directly to the simmering broth. Cook for 4 minutes until just tender.

    Add shrimp and squid. Stir gently and cook until shrimp pink and squid opaque, about 2 minutes.

    Stir in fish sauce. Taste and adjust with more fish sauce or salt as needed.

    Ladle soup into bowls. Squeeze lime juice over each serving and top with fresh herbs.

    Serve immediately with extra lime wedges and fresh herbs on the side.
