Ingredients

  • 4 cups chicken or seafood broth
  • 2 tbsp fish sauce
  • 1 whole lime
  • ½ lb shrimp, peeled and deveined
  • ¼ lb squid, cleaned and sliced into rings
  • 4 oz rice noodles, thin
  • 1 set crispy fried shallots, fresh herbs (cilantro, mint, or basil), sriracha, and hoisin sauce

Instructions

    Bring broth to a boil in a large pot over medium-high heat, about 3 minutes.

    Stir in fish sauce and a pinch of black pepper, then add shrimp and squid.

    Simmer until shrimp turns pink and squid is opaque, about 2 minutes—don't overcook.

    Place noodles in bowls, then ladle hot broth with seafood over the top.
