20-Min Seafood Paella with Saffron & Bread

Ingredients

  • 3 tbsp olive oil
  • ½ medium yellow onion, diced
  • 3 cloves garlic, minced
  • ¼ tsp saffron threads
  • 1.5 cups chicken or seafood broth
  • 12 oz large shrimp, peeled
  • 12 oz mussels or clams, cleaned
  • 2.5 cups cooked short-grain rice (bomba or arborio)
  • 4 slices crusty bread (sliced)

Instructions

    Steep saffron threads in warm broth for 2 minutes. Set aside.

    Heat olive oil in a 12-inch skillet over medium. Add onion, cook until softened, ~3 minutes.

    Add garlic and cook 30 seconds until fragrant. Pour in saffron broth and bring to a simmer.

    Stir in cooked rice and spread evenly. Nestle shrimp and mussels into rice, cover, and cook 3 minutes.

    Remove from heat when shellfish open (discard any that don't). Season with salt and pepper.

    Serve paella in the skillet with crusty bread alongside for soaking up broth.
