Ingredients
- 3 tbsp olive oil
- ½ medium yellow onion, diced
- 3 cloves garlic, minced
- ¼ tsp saffron threads
- 1.5 cups chicken or seafood broth
- 12 oz large shrimp, peeled
- 12 oz mussels or clams, cleaned
- 2.5 cups cooked short-grain rice (bomba or arborio)
- 4 slices crusty bread (sliced)

Steep saffron threads in warm broth for 2 minutes. Set aside.

Heat olive oil in a 12-inch skillet over medium. Add onion, cook until softened, ~3 minutes.

Add garlic and cook 30 seconds until fragrant. Pour in saffron broth and bring to a simmer.

Stir in cooked rice and spread evenly. Nestle shrimp and mussels into rice, cover, and cook 3 minutes.

Remove from heat when shellfish open (discard any that don't). Season with salt and pepper.
