Ingredients

  • ¾ lb shrimp, peeled and deveined
  • 2 tbsp fish sauce
  • 1 tsp turmeric powder
  • ½ tsp dried red chili flakes
  • 4 cloves garlic, minced
  • 1 whole fresh lime
  • 4 oz rice vermicelli noodles
  • ¼ cup crispy fried shallots

Instructions

    Bring 4 cups water to a boil in a large pot over medium-high heat.

    Add turmeric, chili flakes, minced garlic, and fish sauce to the boiling water.

    Add rice noodles and cook for 3 minutes until just softened, stirring once.

    Add shrimp and simmer for 2 minutes, stirring gently, until pink and just cooked through.

    Squeeze lime juice into the pot and stir. Taste and add salt if needed.
