Ingredients
- ¾ lb shrimp, peeled and deveined
- 2 tbsp fish sauce
- 1 tsp turmeric powder
- ½ tsp dried red chili flakes
- 4 cloves garlic, minced
- 1 whole fresh lime
- 4 oz rice vermicelli noodles
- ¼ cup crispy fried shallots

Bring 4 cups water to a boil in a large pot over medium-high heat.

Add turmeric, chili flakes, minced garlic, and fish sauce to the boiling water.

Add rice noodles and cook for 3 minutes until just softened, stirring once.
