Seafood Fried Rice

Ingredients
- 3 cups cooked rice
- ½ pound shrimp, peeled and deveined
- ½ pound scallops
- 1 cup frozen peas and diced red bell pepper
- 2 large eggs
- 3 stalks green onions, sliced

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the 0.5 lb shrimp and 0.5 lb scallops; cook until just opaque, about 3 minutes. Remove to a plate.

Add 1 more tbsp oil to the skillet. Pour in the 2 beaten eggs; scramble until just set, about 1 minute. Push to one side.

Add the 3 cups cooked rice and 1 cup frozen peas and red bell pepper. Stir-fry everything together, breaking up clumps, until the rice is hot and slightly toasted, about 4 minutes.

Return the seafood to the skillet. Add 2 tbsp soy sauce and 1 tsp sesame oil; toss to combine. Cook 1 minute more.

Stir in the 3 sliced green onions and serve hot.
