Seafood Fried Rice

A quick and satisfying fried rice loaded with shrimp, scallops, peas, and red bell pepper, finished with scrambled egg and green onions. Perfect for a fast weeknight dinner.

Ingredients

  • 3 cups cooked rice
  • ½ pound shrimp, peeled and deveined
  • ½ pound scallops
  • 1 cup frozen peas and diced red bell pepper
  • 2 large eggs
  • 3 stalks green onions, sliced

Instructions

    Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the 0.5 lb shrimp and 0.5 lb scallops; cook until just opaque, about 3 minutes. Remove to a plate.

    Add 1 more tbsp oil to the skillet. Pour in the 2 beaten eggs; scramble until just set, about 1 minute. Push to one side.

    Add the 3 cups cooked rice and 1 cup frozen peas and red bell pepper. Stir-fry everything together, breaking up clumps, until the rice is hot and slightly toasted, about 4 minutes.

    Return the seafood to the skillet. Add 2 tbsp soy sauce and 1 tsp sesame oil; toss to combine. Cook 1 minute more.

    Stir in the 3 sliced green onions and serve hot.
