Ingredients
- 8 large scallops
- 100 g vermicelli noodles
- 4 cloves garlic
- 2 tbsp soy sauce
- 3 stalks green onions
- 1 inch piece ginger
- 1 small carrot
- 2 tbsp vegetable oil

Soak the 100g vermicelli in warm water for 10 minutes until soft, then drain and arrange on a heatproof plate.

Mince the 4 garlic cloves and 1 inch ginger. Slice the 3 green onions into thin strips and julienne the 1 small carrot into matchsticks.

Pat the 8 scallops dry and arrange them on top of the vermicelli. Sprinkle with half the garlic and ginger.

Set up a steamer over boiling water. Steam the plate for 8-10 minutes, until the scallops are just opaque and firm to the touch.

While steaming, heat the 2 tbsp vegetable oil in a small pan over medium. Add the remaining garlic and ginger, cook until fragrant, about 1 minute.

Remove the plate from the steamer. Drizzle with the 2 tbsp soy sauce and the hot garlic oil. Top with the green onions and carrot shreds.
