Ingredients

  • 2 whole English muffins
  • 4 oz bulk breakfast sausage
  • 2 whole large eggs
  • 2 slices sharp cheddar cheese
  • 1 tbsp butter
  • ¼ tsp salt
  • ¼ tsp black pepper

    Split the 2 English muffins and toast them in a toaster or under a broiler until golden, about 2-3 minutes. Set aside.

    Divide the 4 oz sausage into 2 equal portions and shape each into a thin patty, slightly larger than the muffin.

    Heat a skillet over medium heat. Cook the sausage patties until browned and cooked through, about 4-5 minutes per side. Transfer to a plate.

    In the same skillet, melt 1 tbsp butter. Crack the 2 eggs into the skillet, keeping them separate. Season with 0.25 tsp salt and 0.25 tsp black pepper.

    Cook the eggs sunny-side up until the whites are set but yolks are still runny, about 3-4 minutes. If you prefer firmer yolks, flip and cook 1 minute more.
