Ingredients

  • 1 lb sauerkraut
  • 1 lb smoked sausages
  • 1.5 lb potatoes
  • 1 medium onion
  • 2 tbsp butter
  • 1 cup chicken broth
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Drain the 1 lb sauerkraut and rinse briefly under cold water; squeeze out excess liquid. Set aside.

    Slice the 1 lb sausages into 1/2-inch rounds. Peel and dice the 1 medium onion. Scrub the 1.5 lb potatoes and cut into 1-inch chunks.

    Melt the 2 tbsp butter in a large pot over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.

    Add the sausages and cook until lightly browned, about 5 minutes, stirring occasionally.

    Stir in the sauerkraut, potatoes, 1 cup chicken broth, 1/2 tsp salt, and 1/4 tsp pepper. Bring to a simmer.

    Cover and cook over low heat until potatoes are tender when pierced with a fork, about 25 minutes.

    Taste and adjust seasoning with more salt or pepper if needed. Serve hot, with extra butter or mustard if desired.
